Never toss leftover pasta or withering broccoli again. Just make this quick and efficient recipe and you will feel like a leftovers master. Plus, it tastes flipping great.
Any pasta will do--I like long and strong--but whatever you have is best!
Notes: Ricotta cheese is part-skim.
5 INGREDIENT BROCCO-LETTI
Ingredients: 3-4 cups leftover pasta, 2 cups broccoli florets, 1/2 cup ricotta cheese, 1/4 grated Parmesan, 2 tsp. minced garlic, 1/2 tsp. each salt and pepper.
Serves 2 or 1 very hungry person.
1. Steam broccoli using a saucepan and steamer insert for 5-7 minutes until just fork-tender. (Or cook in 1 tbsp. water in microwave, covered, for 3-4 minutes on high.)
2. Add broccoli to food processor with ricotta, Parm, garlic, salt and pepper. Process until smooth. You may add a couple tablespoons of water to loosen, if needed.
3. Heat pasta. Tip broccoli sauce into pasta, tossing to combine. Sprinkle over more Parmesan before serving.
