So much going on here, and I am not sorry about it at all. I made these with a standard monster cookie in mind, then went extra. Husbands, neighbors, kids, and dogs will fight for them. (Though I don't condone giving chocolate to your pup.)
Any nut butter will work, I love almond, but peanut or cashew is also delish!

ALMOND BUTTER TRIPLE CHIP MONSTER COOKIES
Ingredients: 1 cup softened butter, 1 cup packed brown sugar, 3/4 cup granulated sugar, 1/3 cup almond butter, 2 eggs at room temperature, 2 tsp. vanilla extract, 1 1/2 tsp. salt, 1 tsp. baking soda, 1 tsp. baking powder, 2 tsp. corn starch, 2 1/3 cups all-purpose flour, 2/3 cup rolled oats, 1/2 cup semi-sweet chocolate chips, 1/2 cup butterscotch chips, 1/2 cup white chocolate chips, 1/2 cup mini M&Ms plus extra for the cookie tops.
Makes about 32 three-inch cookies.
1. Preheat oven to 350* and line baking sheets with parchment paper.
2. In one large bowl, cream butter, almond butter, and sugars together until fluffy. Add eggs and vanilla and continue mixing until creamy.
3. Add salt, baking powder, baking soda and corn starch. Fold in flour until almost mixed through. Fold in all kinds of chips, followed by most of the M&Ms (save a few for the tops of the cookies).
4. Using 2-inch scoop, drop dough onto baking sheets, 6-8 scoops , max. Press M&M's into the top of the cookies. Bake for 12-14 minutes. Remove cookie sheet and give it a hard whap on the counter to deflate cookies before cooling.
