I can't say enough about how absolutely yummy this salad is. And so simple.
The apples are juicy and crisp, the strawberries sweet with a hint of tart, the chia seeds provide crunch while the pumpkin seeds give nutty crunch + salt and the Feta is tart and chewy-dry like it should be, all on a bed of fresh mixed baby lettuces. The final bit is a conservative drizzle of apple vinaigrette- for that over-the-top punch of flavor. Y U M

APPLEBERRY CHIA SALAD
Ingredients: 5 cups mixed baby lettuces, 1 cup strawberries, 1 small apple, 1/3 cup Feta cheese-crumbled, 1 tsp. chia seeds, 2 tbsp. roasted and salted pumpkin seeds. For the vinaigrette: 1/2 cup neutral oil, 3 tbsp. apple cider vinegar, 1 tbsp. apple juice, 1 heaping tsp. Dijon mustard, 1 tsp. sugar, tiny pinch of salt.
Serves 2.
1. Split the greens between two plates. Hull and slice strawberries vertically. Slice apple thinly. Arrange over the top of the greens.
2. Sprinkle over Feta, chia and pumpkin seeds.
3. Make the vinaigrette: whisk ingredients together in a measuring glass until emulsified (or shake up in a jar). Drizzle over the salad.
