You might be thinking, oatmeal, schmoatmeal.
But hear me out. It doesn't have to be boring or resemble a gloopy bland mass of sadness, assuming you were tortured as a child by breakfast bowls of such nonsense. This oatmeal tastes like an apple pie with all the fun fall-ish dried things we like scattered over the top. No boring bites, no gloop. Promise.
You can make your own apple pie spice blend! See tip below.
Notes: Oats are Quaker.
AUTUMN OATMEAL
Ingredients: 3/4 cup rolled oats, 1 1/2 cups water, 1 tsp. vanilla extract, 1/4 cup unsweetened apple sauce, a pinch of sea salt, 1 tbsp. brown sugar, 1/2 tsp. apple pie spice, broken walnuts, dried cranberries, dried mango, pumpkin seeds.
Serves 1.
1. Bring water, salt, and vanilla to a boil. Stir in oats. Turn down to simmer. Stir and cook until water is absorbed.
2. Add applesauce, brown sugar, and apple pie spice, and fold into the oats. Remove to a bowl.
4. Add toppings in your desired quantities. Broken walnuts, dried cranberries and mangos, and pumpkin seeds.
Tip: To make your own apple pie spice, stir together: 3 tsp. the ground cinnamon, 1/2 tsp. ground ginger, 1/2 tsp. ground nutmeg, 1/2 tsp. ground allspice, 1/2 tsp. ground cloves. Store in a small jar or baggie. Can be doubled or tripled, etc., as needed.
