I won't start by saying this is a favorite...(of course it is) but what I love about this salad is that all my texture needs (and flavors) are punched through in every bite. Like when the bite is so good you wriggle in your seat or punch the air. I used carved deli chicken, but I've also made it with leftover sliced breast and that was great. The ranch is homemade, lighter than what you can buy and just as delicious.

BABY KALE SALAD WITH ROASTED CHICKEN & HEALTHIER BUTTERMILK RANCH
Ingredients: 4 cups baby kale, 1 cup shredded roasted chicken, 1/4 English cucumber- chopped, 2 hard-boiled eggs-chopped, 1 tbsp. pumpkin seeds, 1 tsp. black pepper. Healthier Buttermilk Ranch: 1/4 cup Greek yogurt, 1/4 cup buttermilk, 1 tbsp. ranch seasoning, 1 tsp. dried parsley.
Serves 1-2.
1. Plate greens, followed by chopped cucumber, egg, shredded chicken, and pumpkin seeds.
2. Make dressing: Whisk all ingredients together or shake up in a jar.
3. Dribble ranch over the salad. Generously sprinkle with black pepper.
