Well, this could be my new favorite. And my husband's.
On a whim I did a quick sauté with some bell pepper that needed to be used and decided to make melty bacon sandwiches and to be rando, I used four different shredded cheeses which honestly, made the sandwich so amazing.
"The bread I used was a rosemary and olive oil loaf, if you can't find that sour dough would be so good too!"
Notes: Bacon is uncured.
BACON BELL PEPPER MELT WITH MIXED CHEESES
Ingredients: 1/2 green bell pepper-sliced, 1/2 red bell pepper-sliced, 1 tbsp. olive oil, pinch of salt, pinch of pepper, 4 slices artisan bread, 8 pieces bacon-cooked, 1/3 cup shredded mozzarella, 1/3 cup shredded sharp cheddar, 1/3 cup shredded pepper jack, 1/3 cup shredded Swiss, 1 tsp. ground oregano, 3-4 tbsp. butter for frying.
