Something cheerful and ultra-delicious...I love this ice cream recipe; I make it a lot for birthdays OR because I'm craving a super-vanilla-cake-y-cream experience with many happy rainbow sprinkles.
Variation: tint the ice cream with a few drops of coloring and use sprinkles in that same color.
Notes:
BIRTHDAY CAKE ICE CREAM
Ingredients: 1 1/2 cups 2% milk, 1 1/2 cups heavy whipping cream, 1 tsp. cream of tartar, 1 tsp. vanilla extract, a pinch of sea salt, 1/2 tsp. almond extract, 3/4 cups powdered sugar, 1 cup crumbled yellow cake, 1/2 cup rainbow sprinkles.
Makes about 6 servings.
1. Prep: Freeze the ice cream maker base according to the manufacturer's instructions.
2. Make base: Whisk together in a chilled bowl, milk, cream, cream of tartar, extracts, salt, and powdered sugar until thoroughly combined. Pour into the ice cream maker base and process for 20 minutes.
3. Add cake and sprinkles: With the machine going, tip in sprinkles followed by the crumbled cake. Process for 30 seconds to a minute longer until sprinkles and cake have made their way through the ice cream. Eat immediately as soft-serve or remove to a freezer-safe container and freeze for 2-3 hours for scoopable hard-serve.
