BLUEBERRY BUCKLE OVERNIGHT OATS

"What the heck is a 'buckle'?" said little Heidi to her Grandmommy.


"Sugar, it's blueberry cake with a crumbly streusel topping, and in our family, we make it with walnuts because they are good for you and you need to like nuts in things."


This is my morphed version of Blueberry Buckle- into overnight oats. Creamy, subtly sweet with heavy vanilla tones, fruity blueberries, walnut studs and a drizz of maple syrup. So yummy and comforting. Bonus: hidden vanilla protein powder to be good to yourself.



"A tiny pinch of ground nutmeg adds such a homemade flavor, I love it."

Notes: Vanilla protein powder is Garden of Life. Maple syrup is 'pure' from Trader Joe's.

BLUEBERRY BUCKLE OVERNIGHT OATS

Ingredients: 1/2 cup old-fashioned oats, 2/3 cup unsweetened vanilla almond milk, 1/4 tsp. vanilla extract, 1/2 scoop vanilla protein powder, 1 Tbsp. almond butter, pinch of ground nutmeg (opt.). Topping: 1 Tbsp. chopped toasted walnuts, 1/3 cup blueberries, 1 tsp. maple syrup

Serves 1


1. The night before: Stir oats, almond milk, nutmeg, almond butter, and protein powder together in a glass. Cover with plastic wrap and put to sleep in the fridge.

2. Next morning, remove oats, top with blueberries, walnuts, and maple syrup.
