A whole different ball game for crispy, cereal bar treats, guys.
You need to think in extremes. The crackling crisp crunch is there in a big way (that's the first thing you notice), but the flavors take over, and boy, are you in for it. Super-charged apple cinnamon flavor, with Apple Cinnamon Chex cereal, sweet apple chips, and toasty pecans, plus a drizzle of nutty brown butter and apple cider icing. So freaking good!
For apple pie-like flavor, add apple pie spice and 1/3 tsp. cream of tartar to the cereal mix.
Notes: Butter is unsalted.
BROWN BUTTER APPLE CINNAMON
& PECAN CEREAL BARS
Ingredients: 5 cups Apple Cinnamon Chex, 2 cups crispy rice cereal, one 10-ounce bag of mini marshmallows, 1/2 cup butter, 1 tsp. vanilla extract, 2 tsp. ground cinnamon, a pinch of sea salt, 1 cup chopped pecans, and 1 cup broken apple chips. For the apple cider icing: 1 cup powdered sugar, 2 tbsp. apple cider, 1/2 tsp. cinnamon.
Makes one 9x13 pan of bars.
1. Heat 1/4 cup (half) of the butter in a large and deep saucepan over medium-low heat. Add marshmallows, stirring to coat in the butter while they melt.
2. Mix Chex cereal, crispy rice cereal, pecans, and apple chips in a large zip baggie. Add 1 tsp. ground cinnamon and a pinch of sea salt. Close the bag, and shake to mix.
3. When the marshmallows are melted and combined with the butter, stir in vanilla extract. Tip in the cereal in one go, and stir quickly to coat.
4. Dump, then press the mixture evenly and firmly into a parchment-lined 9x13 inch baking dish. Set aside.
5. In a small saucepan, heat the remaining butter over medium heat until it turns brown. This takes about 7-10 minutes, swirling regularly. (It's done when there are little brown specks and a nutty aroma.)
6. Drizzle brown butter over the bars. Chill for 30 minutes.
7. Make apple cider icing: Whisk powdered sugar, apple cider, and cinnamon together. Remove bars from the refrigerator and cut. (I find it easier to do this after lifting out of the baking dish.) Drizzle bars with icing.
