I love Waldorf Salad, for all its retro vibes. It is so satisfyingly textured; each bite is full of flavor: creamy, nutty, sweet, salty, crisp, chewy, and savory. It hits all the levels. Maybe that is why it has stood the test of time? With the addition of warm, gently spiced chicken and a bed of cold ribbon-y leaf-lettuce, this salad will become a favorite of yours, too.
"Some people make a Waldorf with grapes instead of raisins. If that is your preference, I say do it. Raisins are chewy and sweet and grapes are wet and sweet- both good in this."
Notes: Lettuce is red-leaf. Raisins are golden. Mayonnaise is Hellman's.
CHICKEN WALDORF CHOPPED SALAD
Ingredients: 1 diced apple- skin on, 3 stalks of chopped celery, 1/2 cup of toasted chopped walnuts, 1/4 cup raisins, 2 cups diced cooked chicken, 3-4 large leaves of lettuces, cut into ribbons, 1/4 tsp. Garam Masala, 1/4 cup mayo, pinch of sea salt, cracked pepper.
1. Rub the Garam Masala seasoning into the cut chicken and set aside.
2. Combine apple, celery, walnuts and raisins in a bowl. Add the mayo and salt and pepper to taste. Mix to combine.
3. Fold in the chicken. Spoon the salad over the ribbons of lettuce. Serves 2.
Tip: Garam Masala is a spice blend typically used in Indian cooking. It is a blend of cinnamon, cloves, cumin, cardamom and coriander.
