Oh my. Homemade crackers for the win and they taste amazing. These are gluten-free, sugar-free, oil-free and butter-free. You won't believe how simple the recipe is! Pair with your favorite dips and cheeses.
"If your crackers have a slight softness in the very center, let the oven cool down, then give them 10-15 minutes longer in the still-warm oven."
Notes: Almond flour is Kirkwood.
CHRISTMAS CRACKERS: CHEDDAR SESAME SOY & PAPRIKA PARMESAN
INGREDIENTS: 2 cups almond flour, 2 eggs, 1/4 cup parmesan, 1/4 cup shredded mild cheddar cheese, 1/2 tsp. salt, 1/4 tsp. onion powder, 1/4 tsp. paprika, 1/2 tsp. dried parsley, 2 tbsp. soy sauce, 1 tbsp. sesame seeds.
Makes about 2 dozen each.
1. Preheat oven to 350*. You will need 4 pieces of parchment paper.
2. Make Cheddar Sesame Soy: Stir together 1 cup almond flour, 1 egg, cheddar cheese, soy sauce and onion powder. Form a disk and place on a piece of parchment, pressing it into a rectangle. Place another piece of paper on top, then roll to 1/8 inch thick using a rolling pin or wine bottle. Peel off top piece of parchment, sprinkle over sesame seeds, then cut crackers into desired shape, but do not separate. Bake for 15-20 minutes, until edges are golden and top is firm with light color. Remove to cool, then cut.
3. Make Paprika Parmesan: Stir together remaining 1 cup almond flour, 1 egg, Parmesan and salt. Form a disk then press into a rectangle shape on top of parchment paper. Place another piece of paper on top, then roll the dough to 1/8 inch thick. Remove top piece of paper then sprinkle with parsley and parm. Cut into desired shape but do not separate. Bake for 15-20 minutes until firm and golden. Remove to cool, then cut.
4. Crackers may be stored in an airtight container.
