It is one of my favorite salads for getting through the older produce. It's fast, mouthwatering, and easy to repeat. Mine typically nods to Greek flavors, though it isn't a game-changer. You can add or substitute ingredients as needed, and easily double or triple the recipe.
Notes: Olive oil is extra virgin.
CHUNKY (CLEAN OUT THE FRIDGE) SALAD
Ingredients: 2 cups chopped cucumber, 2 cups chopped bell pepper (any color), 1/2 cup chopped red onion, 1/4 cup chopped parsley, 1/4 cup chopped dill, 1/4-1/2 cup crumbled Feta cheese.
For the vinaigrette: 1/4 cup olive oil, 1/4 cup vinegar or lemon juice, 1 tsp. minced garlic, sea salt and pepper.
Serves 2.
1. Prep veg: Roughly chop all the veggies into 1-inch pieces and place in a bowl. Chop herbs finely.
2. Finish: Whisky the vinaigrette ingredients in a bowl or shake in a jar. Pour over the salad and toss to coat. Add the Feta cheese and toss once more.
