CINNAMON SUGAR DUSTED BANANA GINGERBREAD

All about the holidays with this one. It's softly spiced with cloves, ginger, cinnamon, and nutmeg and made extra soft (plus rich) with molasses and brown sugar. This bread feels festive but is fuss-free to make. AND it makes a lovely homemade gift!



Notes: Neutral oil is grape seed.


CINNAMON SUGAR DUSTED BANANA GINGERBREAD

Ingredients: 2 overripe bananas, 2 eggs at room temperature, 1/2 cup neutral oil, 1/2 cup packed brown sugar, 1/4 cup molasses, 1 tsp. vanilla extract, 1 1/2 cups all-purpose flour, 1/2 tsp. sea salt, 1 tsp. baking powder, 1/2 tsp. baking soda, 1 tsp. cinnamon, 1 1/2 tsp. ground ginger, 1/2 tsp. nutmeg, 1/4 tsp. ground cloves, 1 tbsp. melted butter, cinnamon-sugar *see TIPS.


Makes one standard 9-inch loaf.


1. Preheat/prep pan: Preheat oven to 350* F. Grease, then line a standard 9-inch loaf pan or dish with parchment paper. In a bowl, whisk the flour, salt, baking powder, baking soda, and all of the spices together.


2. Prep wet ingredients/add in dry: In a large bowl, mash the bananas, then add the eggs, oil, molasses, and brown sugar, whisk well. Whisk in the vanilla. Add the dry ingredients to the wet and mix until just combined.


3. Bake and flourish: Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until top is bouncy and side have pulled away slightly. While still warm, brush with melted butter and double-dust with cinnamon sugar.

TIPS

  1. Make cinnamon sugar by combining equal amounts ground cinnamon and granulated sugar. For extra spice, make the ratio 1.5 cinnamon to 1 sugar.
