COCOA CHIA PUDDING WITH RASPBERRIES
Ingredients: 6 Tbsp. chia seeds, 2 cup almond milk (or milk of choice), 2 Tbsp. unsweetened cocoa powder, 2 scant Tbsp. honey, large handful of raspberries. Serves 2 well.
1. Put all ingredients in a bowl except berries and whisk to combine
2. Refrigerate 5 minutes, stir again.
3. Refrigerate once more, for at least 2 hours.
4. Serve by layering with raspberries and a sprinkling of powdered sugar.
Tip: You can stretch this recipe to 4 by layering "parfait" style with whipped cream and broken cookies.
