DOUBLE TOMATO + BELL PEPPER HOAGIE MELT

I used to make an open-faced sandwich with cheese and tomato everyday through my young adult life. It's tasty. I surpassed it though, today with this sandwich, and I'm not sorry to say that the former has likely been replaced. It's simple and so good. Hoagie bun, swiss cheese, bell peppers, two kinds of tomato (plus seasoning). I used both roma and golden tomatoes because that is what I have, but you can get creative. What is nice about two kinds of tomatoes, is the subtle difference in flavor--one was sweet, one more citrusy. And of course, the pop of juicy bell pepper is delightful. The next time you want a great hot sandwich, give this a whirl.


"I used Swiss cheese because I really think its nutty flavor works here...though if you'd prefer something else, like Munster or Asiago, do that."

Notes: Butter is unsalted.


DOUBLE TOMATO + BELL PEPPER HOAGIE MELT

INGREDIENTS: hoagie buns, sliced green bell pepper, sliced roma tomato, sliced yellow or heirloom tomato, Swiss cheese, everything bagel seasoning, softened butter.


1. Preheat oven to 350*.

2. Build each sandwich by swiping each side of the inside of the bun with butter. Layer cheese, peppers, tomatoes, cheese. Sprinkle everything bagel seasoning over.

3. Wrap in foil and bake for 15 minutes, until warm, toasty and melty.
