EVERYTHING POPPY SEED SLAW

Feels like summer with all the crisp, cool, and savoriness you desire plus a touch of sweet...


Don't you love how slaw pairs well with so many grill-out and BBQ items, making it a smart side to bring to a picnic or family gathering, that gets better as it sits? This recipe has a fun twist, in that the dressing is a homemade low-fat poppy seed number that uses yogurt and honey and apple cider vinegar to give it that characteristic sweet-punch. The chef's kiss is everything bagel seasoning. (You're still using it aren't you?)


Make this slaw your new summer bestie...it's light, bright, crunchy, punchy, and unforgettable.


Better eating tip: Let the slaw rest at room temperature for 15-20 minutes, if you had been chilling it prior to serving.

EVERYTHING POPPY SEED SLAW

Ingredients: 4 cups chopped green cabbage, 1 chopped medium orange bell pepper, 1 chopped medium yellow bell pepper, 4 sliced scallions or green onions, 1/4 cup chopped fresh parsley, 1/2 tbsp. everything bagel seasoning. For the Low-fat Poppy Seed Dressing: ½ cup apple cider vinegar, ½ cup low-fat plain yogurt, ½ cup light mayonnaise, ¼ cup honey or agave nectar, 1 tsp. onion powder, 1 tsp. ground mustard, 1 tsp. sea salt, 1 tbsp. poppy seeds.

Serves 4-6.


1. Combine chopped cabbage, bell peppers, scallions, and parsley in a large bowl.

2. Make the dressing by whisking all of the ingredients together (or by shaking in a jar), until emulsified.

3. Mix half of the dressing into the slaw. Taste. If you want it wetter, add more. Otherwise, reserve it for serving.

4. Sprinkle everything bagel seasoning over the slaw and toss. Serve. If chilling to serve later, make sure to toss the slaw and allow it to come to room temperature first, for the best flavor.
