FLAKED TUNA, AVOCADO & CHICKPEA SALAD
Ingredients: 1 can white tuna packed in water, 1 large avocado, 1/3 cup thinly sliced red onion, 1 can chickpeas, 2 tbsp. garlic-infused olive oil, juice of 1/2 lemon, 1/2 tsp. sea salt, 1/2 tsp. pepper, 1/2 tsp. dried dill.
Serves 2.
1. Prep: Drain and rinse the chickpeas, chop the avocado, and drain the tuna.
2. Assemble: Tip the chickpeas, avocado, and sliced red onion into a bowl. Using a fork, flake in the tuna. Add the garlic-infused olive oil, lemon juice, sea salt, pepper, and dill over the top. Stir to combine. Serve immediately or chill overnight.
