GARDEN PIZZA (field of poppies)

When you're feeling creative juices flowing, make this easy homemade pizza, and grow a garden of toppings. This "field of poppies" pizza is Margherita-ish, the classic tomato, basil, and mozzarella combo that is my ultimate (plus I added chives and Feta because I have an addiction). This garden is grand, but feel free to build your garden of toppings--' skies the limit.

Notes:

GARDEN PIZZA (Field of poppies)

Ingredients: 1 recipe for pizza crust--see TIPS below* or store-bought pizza dough, 2 tsp. garlic-infused olive oil. 3/4-1 cup pizza sauce, 2 cups mozzarella cheese, 1 cup halved cherry tomatoes, 1/4 cup Feta cheese, fresh basil leaves, fresh chives.

Serves 4-6.

1. Preheat the oven to 425*. Prepare the pizza dough according to the recipe, or roll out a premade dough on a lightly floured surface to approximately 12 inches. Lift the dough onto a baking sheet dusted with cornmeal or pizza stone. Bake for 5 minutes.

2. Remove the pizza crust and brush lightly with garlic-infused olive oil. Spoon, then spread on the pizza sauce. Cover with mozzarella cheese to your liking. Using halved cherry tomatoes, chives, and basil leaves, decorate the surface of the pizza to look like a garden.

3. Bake the pizza for 13-17 minutes, depending on your desired level of doneness.

TIPS

Recipe for Simple Pizza Dough: 2 1/2 cups all-purpose flour, 1 envelope of rapid-rise yeast, 3/4 tsp. sea salt, 1 cup of very warm water (120* F), 2 tsp. olive oil.

  1. Combine 2 cups of flour, salt, and yeast in a large bowl. Stir in very warm water and oil until combined. Slowly add just enough of the remaining 1/2 cup flour to make a soft dough. Knead on a lightly floured surface until smooth and elastic, for 4 to 6 minutes. Cover and let rest for 10 minutes before rolling out.
