Need a new salad? I've been doing a lot of rolled egg salads of late. I love the protein kick and egg is actually darn good with cold greens. This salad rocks with only five main ingredients. It's easy to prep--like under ten minutes--and tastes very right. You could use your creamy dressing of choice. I didn't make one this time, I used Trader Joe's Spicy Cashew Butter Dressing, a smooth, nutty, gingery number with bits of lime and chili peppers. Such a good salad!

Notes: Dressing is Spicy Cashew Butter Dressing by Trader Joe's.
KALE BACON AVOCADO SALAD WITH ROLLED EGG
Ingredients: 2 cups baby kale, 1 tbsp. olive oil, 1 egg, 1 avocado-cubed, 1/4 cup cooked and crumbled bacon, 1/2 tsp. Everything bagel seasoning, 1 tbsp. torn cilantro leaves, creamy dressing of choice.
Serves 1.
1. Heat olive oil in a small skillet pan over medium high heat. Crack-in the egg and hastily break up the yolk with a fork. Sprinkle over everything bagel seasoning. Fry until done, flipping over to brown the top side. Set aside.
2. Lay baby kale on a plate. Add the cubed avocado in two columns down both sides of the salad leaving space in the middle. Follow with bacon.
3. Roll the egg and lay it in the middle on the plate. Tear over some cilantro, then drizz over the dressing. Dig in.
