LEMON MINT 'MOCKARITA'

Not every marg has to have alcohol. And that is coming from a margarita freak--ahem, me. This one is refreshingly sour with a sweet edge, plus a fresh kiss of mint that plays on your tongue and bubbles for quirk on the top. It's fun and 'skinny' and yummy, with tapas or before a heavy Mexi-meal. (And ideal for those who want a fun drink sans the booze or for those who are too young to partake.) Enjoy!




Notes: Soda water is La Croix.


LEMON MINT 'MOCKARITA'

Ingredients: Juice of 1 1/2 lemons (1/3 cup), juice of 1 lime (2 tbsp.), juice of 1/2 orange (1/4 cup), 1-2 tsp. agave nectar, 2-3 ounces of lemon soda water, 1 lemon wedge, and 1 lime wedge for garnish.

For the lemon-mint rim: 1 tbsp. sugar, 2 tsp. lemon zest, 2 tsp. chopped mint, 1 tsp. sea salt.


Makes 1 "mockarita".


1. Rim the glass: mix the sugar, coarse salt, lemon zest, and chopped mint on a plate. Run a cut piece of lemon around the rim, then dip it into the sugar mix. Fill the glass with ice.


2. Build the drink: To a cocktail shaker, add ice, lemon juice, lime juice, orange juice, and agave. Shake vigorously.


3. Finishing touches: Pour the mixture over the ice in the glass. Top with lemon soda water. Garnish with a lemon and lime wedge and more mint if you like. Serve immediately.
