Marinated Olives

Don’t do boring olives when you can, with just a few ingredients, serve gorgeously spiced, special olives that you’d normally pay ten dollars or more a pound for.



Notes: Garlic infused olive oil is Trader Joe’s.


Marinated Olives

Ingredients: 18 ounces mixed olives (any kind, black, Kalamata, Spanish, etc.), 1/4 cup garlic infused olive oil, 1 tbsp. red wine vinegar, peel of 1 small orange cut into strips, 2-3 bay leaves, 1 tsp. herbs de Provence, 1 tsp. chili flakes, pinch of sugar.


Makes a scant 3 cups.


1. Prep: Drain the olives, peel the orange and slice the peel into thin strips.


2. Mix and Roast: Tip olives into a container with a lid or into a medium bowl. Add olive oil, vinegar, orange peel, bay leaves, herbs de Provence, chili flakes, and sugar. Cover and shake well to combine (or stir to coat). Cover and refrigerate at least 24 hours or up to a week. Remove bay leaves before serving.
