MEDITERRANEAN MEATBALL BOWL

The soft meatballs flavored with Grecian herbs are dropped onto swooshes of hummus and tzatziki in the bottom of your bowl...then fresh baby spinach and crisp lengths of yellow bell pepper are added, plus Feta cheese and dill sprinkled on top...it's a full-on mouth party that you won't want to leave.


I have recipes for Raita and Hummus, but feel free to use store-bought if more accessible for you.

MEDITERRANEAN MEATBALL BOWL

Ingredients: 1/2 pound lean ground lamb or beef, one egg, 1/3 cup breadcrumbs, 1 tbsp. chopped mint, 1 tbsp. chopped parsley, 1 tbsp. 1/4 cup grated onion, 1 tsp. minced garlic, 1/2 tsp. sea salt, 1/2 tsp. pepper, 1 1/2 tbsp. olive oil, hummus, raita (or tzatziki), baby spinach, micro-greens (optional), one medium yellow bell pepper, crumbled Feta cheese, and dried dill.

Serves 2-3.


1. In a bowl, combine the lamb, egg, breadcrumbs, mint, parsley, onion, garlic, salt, and pepper. Form 8-10 balls. 2. Heat the olive oil in a skillet pan over medium heat. Fry the meatballs on all sides until browned and cooked through. Remove from the heat. 3. Assemble the bowls: Spoon a "swoosh" each of hummus and tzatziki over the bottom of the bowls. Add a handful of baby spinach to each, followed by bell pepper strips. 4. Add the still-warm meatballs to each bowl. Finish with crumbled Feta cheese and dried dill over the top to your taste.
