You've heard me say it before, no boring breakfasts. It is the beginning of your day, after all, and it truly adds either a spark or a "meh" vibe as you start. I'm not one to make significant, elaborate breakfasts unless I have guests or it's a holiday, so don't worry that this delicious bowl of goodness will take you any longer than ten minutes, and it might take you five.
Notes: Yogurt is unsweetened Greek, vanilla-bean.
PAN-TOASTED MAPLE PECAN & OAT CRUMBLE YOGURT BOWL
Ingredients: 1 tbsp. butter (or ghee or coconut oil), 1/2 cup chopped pecans, 1/3 cup rolled oats, 1 tbsp. pure maple syrup, a pinch of sea salt, 1/2 tsp. ground cinnamon, 1 cup yogurt, 2 tbsp. warmed nut butter, 1 tsp. chia seeds.
Serves 1.
1. Melt the butter in a skillet pan over medium heat, then add the chopped pecans, oats, maple syrup, sea salt, and cinnamon. Push around the pan for 5 minutes or so until toasted and fragrant. Remove to cool slightly.
2. Dollop yogurt into your bowl. Add the rubble over the top, followed by drizzles of warmed nut butter and a sprinkling of chia seeds.
