The first bite was one of those bites that brought me up out of my chair so I could dance around. There may have been some fist pumping (and pelvic thrusting). That good. Peaches are a luscious salad choice when in season, so don't miss this tangle of flavors on your plate if you can help it. Nectarines are a good sub if you can't find good peaches.
I took this picture sans dressing--my favorites are balsamic vinaigrette for puckering punch or creamy blue cheese for comfort. A raspberry vinaigrette would be nice, as well.

PEACHY BLEU SALAD w/ PISTACHIOS AND BACON
Ingredients: 4 cups baby lettuces, 1 large ripe peach, 4-5 strips cooked bacon, 1/4 cup thinly sliced red onion, 1/4 cup crumbled blue cheese, 1/4 cup shelled pistachios, 1/2 avocado-chopped, 2 tbsp. dressing of choice.
Serves 1-2.
1. Layer the bottom of your plate or platter with baby lettuces. Slice peach and add on top of lettuce.
2. Chop cooked bacon and 1/2 of an avocado. Add to salad, followed by pistachios, bleu cheese and whips of red onion. This salad is OK to sit up to an hour prior to dressing, for depth of flavor.
