PERFECT SUMMER SALAD

This is the salad I keep in my fridge all through summer when tomatoes are at their peak in flavor, and my mother-in-law gifts me with endless cucumbers.


It's deliciously juicy and full of tang- the red onion's heat is tempered, slightly, by a quick bath in some water. The red bell pepper is sweet and crisp. To say your mouth will water is an understatement, but when it's hot, is there really anything better?


Make a double batch and bring it to your next get-together.

Notes: Olive oil is extra-virgin.


PERFECT SUMMER SALAD

Ingredients: 2-3 medium tomatoes, 1/2 English cucumber, 1 red bell pepper, 1 small red onion, olive oil, balsamic vinegar, sea salt, and black pepper.

Serves 4.


1. De-seed tomatoes, cucumber and bell pepper. Chop into bite-sized pieces, place into a bowl.

2. Slice red onion thinly, and soak in a small bowl covered with water for 5 minutes. Drain and add to bowl.

3. Whisk together approximately 2 tbsp. of the olive oil and 2 tbsp. of the vinegar until well combined. Add salt and pepper to taste. Pour over salad and toss.

4. Serve immediately, or store covered in fridge up to 5 days. The salad takes on more tang the longer it sits.
