I feel like more attention should be paid to putting the flavors of mint and pomegranate together...they complement each other well. This cocktail is easy to booze up or down, depending on your desired level of gin. And it's pretty for the holidays or whenever you make it.
Notes:
POMEGRANATE + MINT GIN & TONIC
Ingredients: 4 ounces pomegranate juice, 2 ounces gin, 1-ounce tonic, 1 tbsp. pomegranate seeds, 5-6 mint leaves.
Makes one cocktail.
1. Muddle mint leaves in the bottom of a glass (reserving one or two for later). Add ice to the top.
2. To a cocktail shaker, add ice, 2 ounces of gin, and 4 ounces of pomegranate juice. Shake vigorously.
3. Pour the mixture over the ice in the glass and top with 1 ounce of tonic water. Garnish with a spoonful of pomegranate seeds and more mint.
TIP
To make a pitcher, muddle a handful of mint leaves in the bottom of a pitcher. Add 20-24 ounces of pomegranate juice and 12 ounces (1 1/2 cups) of gin. Stir and chill for 1 hour or until serving. To serve, pour the mixture over the ice in each glass, and top with tonic water and pomegranate seeds. Makes 5-6.
