RAINBOW CHOPPED SALAD + PESTO GODDESS DRESSING

It has no cheese or meat, but it doesn't need it. And I mean it. (I'm not in your kitchen though, so if you add some in, I'll have no idea.)


This is a happy salad full of bright flavors and spunky texture for your mouth to enjoy, which also means satiation. The Pesto Goddess dressing is a cheat recipe--or can be, meaning you can use purchased pesto if you don't feel like making your own. But here's my fave Pesto recipe if you want it. Make this fabulous salad, and be happy.



Notes: Sour Cream is Daisy lite.


RAINBOW CHOPPED SALAD +

PESTO GODDESS DRESSING

Ingredients: 3 cups shredded romaine, 1 cup chopped tomatoes, 1/2 cup chopped carrots, 1 cup chopped yellow bell pepper, 1 cup chopped cucumber, 1/2 cup chopped purple cabbage, and roasted sunflower seeds. For the Pesto Goddess dressing: 1/2 cup pesto, 1/4 cup sour cream (or Greek yogurt), 1/2 tsp. sea salt, 1/2 tsp. pepper, 1/2 tsp. garlic powder, 1/3 cup olive oil

Serves 4-6.


1. Make the dressing first, by whisking all of the ingredients together in the bottom of a large bowl.

2. Directly on top of the dressing, add the romaine, tomatoes, carrots, bell pepper, cucumber, and purple cabbage. Toss well to coat in the dressing, then let rest for 15 minutes. Sprinkle sunflower seeds over the top, if you like, before serving.
