You can absolutely eat this dish for something other than breakfast...I simply like the word. (It makes me feel relaxed and content and like my day is going to be wonderful.) The tofu gets extremely crisp and browned after soaking up a nutty brown marinade. It's totally delicious and great along side an egg- however you do your egg. I lay everything on a bed of greens, which help to capture any residual juices and sesame seeds that may escape.
The runny yolk of my egg was stellar against the greens and hot, crisped tofu!
Notes: Soy sauce is low-sodium.
SESAME CRUSTED TOFU BREAKFAST
Ingredients: 1 block extra firm tofu, 1 1/2 tbsp. soy sauce, 2 tsp. toasted sesame oil, 1 generous tbsp. tapioca or rice flour, zest of 1 lime, 1 tbsp. sesame seeds, 2 tbsp. olive oil, 2 eggs, 2 cups mixed greens.
Serves 2.
1. Press tofu with a clean kitchen towel until you don't think any more moisture will come out- press a lot. Cut into cubes and place into a large bowl with soy sauce, sesame oil, lime zest, tapioca flour and sesame seeds. Toss gently to coat.
2. Heat olive oil in a large skillet over medium high heat until glossy and fragrant. Tip in tofu all at once, fry for 5-7 minutes until golden and firm on all sides.
3. Push tofu to one side of the pan, crack in the eggs and cook to your liking.
4. When eggs are done, place on top of fresh greens along with sesame tofu. Serve with Sriracha, if you like.
