Plenty of ways to make eggs, but have you gone "taco style?"
Think, full of Mexi-flavor and melted cheese, sassy cooked meat, crisp lettuce, juicy tomato-- you know, all the taco things. This is more of an assembly job than an outright recipe; as with all tacos, you can do it up in your own way. The difference is that you are actually folding the egg into a taco shape and laying some of the toppings inside, (yeah, yeah, like an omelet...shhh), rather than doing a scramble with all the ingredients mixed in—more taco-y. So good.
Frozen fajita peppers and onions work slick for this recipe.

TACO EGG
Ingredients: 1 tbsp. neutral oil, 2 eggs, 1/2 cup chopped onions and peppers, 1/2 cup precooked beef or chicken, shredded lettuce, chopped tomatoes, cheese, sour cream, salsa, and taco seasoning.
Serves 1.
1. Heat oil in a skillet pan over medium heat. Add peppers and onions and precooked meat to skillet, and cook until heated through.
2. Whisk eggs then pour into skillet. Cook until the edges begin to set. Pull back the edge in some places, and let the uncooked egg on top run underneath by tilting the pan. The egg is done when a spatula can be inserted under the egg and the egg moves freely in the pan.
3. Remove egg to a plate. Place cheese and tomato on one half, then fold over into a taco shape. Top with lettuce, salsa, sour cream, and taco seasoning.
