TART + SWEET BABY GREENS SALAD

You probably would not immediately think of this salad combination, and that is part of what makes it such a delight to eat. That, and the flavors marry expertyly together.



"If you don't like feta cheese, go with pinched off bits of goat. If you don't like goat, go with Blue."

Notes: Mayo is Hellman's.


TART + SWEET BABY GREENS SALAD

Ingredients: 4 cups washed mixed baby greens, 2 half pints raspberries, 1 cup frozen white sweet corn- thawed, 1/2 cup crumbled feta cheese, 1/2 tsp. pink salt (or coarse salt like kosher) For dressing: 1/2 cup regular mayonnaise, 1/4 cup sugar, 2 tsp. vinegar, 1/4 teaspoon pepper.


1. Make Betty Lou's dressing: Whisk the mayo, sugar, pepper and vinegar until smooth in the bottom of a large bowl.

2. Put the greens, raspberries, feta, and corn in the bowl on top of the dressing, then sprinkle over the pink salt.

3. Toss the greens with clean hands for at least 1 minutes to ensure even coating of the dressing. Serve.


Tip: If you don't like mayonnaise you can sub-out the dressing for poppyseed.
