WINTER GREENS ORANGE & BEET SALAD

Jewels on a plate comes to mind. The juiciness of this salad is off the charts--you can't beat oranges in the winter. I love how soft and salty goat cheese crumbles and chopped orange set off the minerality of the beets. Pumpkin seeds give crunch, while a homemade, shaken pomegranate vinaigrette pulls it all together.

WINTER GREENS ORANGE & BEET SALAD

Ingredients: 1 large peeled and chopped orange, 1 cup chopped, cooked beets, 1/2 cup crumbled goat cheese, 3 cups winter greens blend, 1/3 cup roasted pumpkin seeds, everything bagel seasoning (optional).

Shaken Pomegranate Vinaigrette: 1/3 cup olive oil, 1/4 cup pomegranate juice, 2 tbsp. red wine vinegar, 1 tbsp. Dijon mustard, 1 tsp. minced garlic, salt, and pepper to taste.


Serves 1-2.


1. Build salad: Layer the salad in this order: greens, beets, chopped orange, pumpkin seeds, goat cheese crumbles.


2. Make vinaigrette: Add the ingredients into a jar with a lid. Shake well. Or whisk the ingredients together until emulsified. Pour over the salad and serve immediately. Finish with a sprinkling of everything bagel seasoning if you like.
